Was looking at my collection of old seeds and discovered this one, -6538418009462208836, that has a really Big Mushroom island not far from spawn using version 1.18 up to 1.21. Large enough that I included the chunk base image so you can see just how big it is. Go to -611, -29 to find it. Has a cave on the northern end that goes from the surface to y -29.
